Smoked:Thanksgiving Side Dishes


Gobble Gobble Gobble! Thanksgiving is right around the corner and at Charcoal Companion®, we want you to be prepared to awe your guests with these smoked sides. We know the turkey is important but we’re focusing on the best part of the meal: the sides! And we’re not preparing just any predictable Thanksgiving sides, we’re smoking them on the grill.

Our Smoked Hasselback Butternut Squash and Smoked Cabbage with Pistachios dishes will have your guests begging for the recipes. We use our Charcoal Companion cherry wood and our V Shaped smoker box to get the perfect amount of smoke, taking these side dishes into unexpected territory by infusing them with savory smoked wood flavor. We’re always looking for non-traditional ways to use our grill and these two recipes are perfect for the holidays.

Smoked Holiday Sides


Hasselback Squash

Ingredients
 
1 butternut squash peeled, halved and seeds removed
 
¼ cup agave syrup
 
¼ cup red wine vinegar
 
½ teaspoon chili flakes
 
1 teaspoon kosher salt
 
Instructions
 
Place half the butternut squash cut side down on a cutting board. Put two
wooden spoons on each side of the squash. Using a kitchen knife, cut the squash
perpendicular to the wooden spoons every ¼ inch. Be careful not to cut all the way through the squash. Repeat this process with the other half of the squash.
Preheat your smoker or grill to 375F. Place the squash in the smoker cut side
down and cook for 90 minutes or until the squash is tender. While the squash cooks, combine the agave syrup, vinegar, chili flakes and salt in a bowl. Baste the squash with the agave mixture every 5 minutes during the last 20 minutes of cooking.
 

SMOKED CABBAGE WITH PISTACHIOS

 
Ingredients
 
1 head cabbage
 
½ cup room temperature butter
 
2 tablespoons nutritional yeast
 
2 teaspoons kosher salt
 
1/4 cup chopped pistachios
 
Remove the core of the cabbage by inserting a knife at an angle, and cut in a circle around the core. You should be left with the cabbage intact but with a hole where the core used to be. Combine the rest of the ingredients in a bowl. Fill the cavity of the cabbage with as much of the butter mixture as you can. Roll a large piece of aluminum foil the long way, then loop it around so that it forms a circle. Place the aluminum foil on a grill or smoker preheated to 375F. Place the cabbage core side up onto the aluminum foil and smoke for 90 minutes or until the cabbage is tender all the way through. To serve, cut cabbage into quarters and top with chopped pistachios.
